Campsite Cooking: Mac-n-Trees

Half the fun of camping is cooking up delicious meals after a long day spent enjoying the outdoors. One of our favorite campsite meals here at Oh, Ranger! is a spruced-up version of mac-n-cheese. Our spin on this dinnertime classic is fortified with broccoli and yogurt to ensure it delivers plenty of nutrients and protein.

Since this recipe calls for items that need to be refrigerated, we recommend making this for dinner the first night of your trip.

The Ultimate Camping Mac-n-Trees recipe:

1 family-sized box of macaroni and cheese (we highly suggest Annie's Organic Shells and White Cheddar)
1 large head of broccoli, chopped (or substitute 1 bag of frozen broccoli, which will keep other ingredients cold)
2-3 tbsp butter
1 small block (about 1/2 pound) of sharp cheddar (we love Irish Dubliner), shredded
1 small cup of sour cream or plain yogurt
1 box of UHT Parmalat milk or soy milk

Bring a large pot of water to a boil. Cook pasta for about 7 minutes until almost done, add chopped broccoli. Continue cooking until pasta is tender and broccoli is tender but still has a bit of crunch. Drain and set aside.

In the empty large pot, melt the butter over the lowest flame. Shred and add the cheddar and stir continuously until melted. Add the powdered cheese mix and a couple heaping tablespoons of sour cream or yogurt. Mix well.

Add milk slowly until a saucy consistency is achieved. Don't add too much milk because you won't be able to thicken it up if you go too far! When the sauce is just right, put the pasta and broccoli back in and mix together.

Makes 4-5 servings
